If you love caramel apples but hate the mess of eating them, this caramel apple bread pudding is a way for you to get your sweet fix without the disarray. Because of this, this caramel apple bread pudding is about to become my autumn brunch staple. Instead of just snacking on a caramel apple, now you can have a meal out of it without the mess!
I had never made bread pudding before, so I felt like it would be a little daunting to make. It wasn't. I was TOTALLY wrong, and man, I'm so happy I was. It's easy to see how versatile the recipe could be for so many other flavored bread puddings. I might need to try a pumpkin bread pudding next! As for now, follow along to see how to make a yummy treat that's sure to be a big hit at your next pot luck or brunch!
Ingredients Loaf of Texas toast 2 cups of cinnamon apple sauce 1 cup of milk 3 eggs 3 tbsp cinnamon 1 cup brown sugar 1/2 cup sugar Apple Slices Caramel Sauce Chopped Nuts
Directions First we are going to make the custard-like mixture for the "pudding" part of bread pudding. In one bowl you will combine half of the brown sugar, all of the sugar, milk, eggs, 1 tablespoon of cinnamon and applesauce. YES apple sauce. Adding the apple sauce will change the texture of this mixture, but will add a beautiful apple taste to the bread. Once you have all of the ingredients in the bowl, hand mix until they are combined.
Next, you will take some of the Texas toast and start ripping it up into approximately once inch pieces. Make a bottom layer of bread. Dump a third of the mixture on this bottom layer. Top this layer with 1 tbsp of cinnamon.
Now, fill the rest of the bowl with tons of tiny pieces of bread. Top this layer with the rest of the mixture.
Right before baking add 1 tablespoon of cinnamon and half of the brown sugar.
Bake at 375 for 50 minutes.
When you pull the apple pudding out, let it sit for about 15 minutes. Now you're ready to COVER it with delicious caramel and peanuts. You can either melt caramels or use the caramel sauce you find at the store. Pour the hot caramel over the entirety of the bread pudding. Then top that piping hot caramel with the chopped peanuts.
Loook at thattt. It's healthy because it's got fruit in it right? Yes. Totally.
