Can we really celebrate summer without celebrating watermelon? I'm willing to bet good money that the majority of you broke out the watermelon this past weekend for Memorial Day. When the pools open and the water gets warm, that means it's watermelon time. I love buying watermelon, but unfortunately I usually end up wasting a ton of it. I'm not one for wasting food, so I wanted a recipe that could help me make the most of of my watermelon scraps. That's where watermelon juice comes into the picture.
We all love freshly squeezed juice, but that can be a somewhat time-consuming task. Let me tell you, this watermelon juice is delicious and takes no more than 5 minutes to make. In other words, it should be a part of your watermelon routine. Slice up watermelon for a cookout/dessert, and then enjoy the leftovers as juice for the days afterward. I maybe should make a watermelon confession before sharing the recipe: my family has always salted their watermelons. Because of that, my juice recipe will involve salt, BUT if you prefer something sweeter, replace the salt with sugar!
All of this is so easy as long as you have a blender!
First, prepare your watermelon. If your watermelon is already cubed, you're set; if not, go ahead and take the watermelon of off the rinds. This works BEST with seedless. If all you have is one with seeds, just remove them before juicing.
Next, take the watermelon and place in blender. Blend until mixed. I did a single serve for my juice, but if you want to make mass quantities, follow this simple rule: for every cup of watermelon, include a tsp.of salt and a basil leaf.
Then, pour into a container. Mix in the salt and basil.
Now you have watermelon juice! So easy and so versatile. Sip and feel like you are transported to a beach.
