This ice cream actually had me texting all of my friends saying - I have found the answer to our ice cream addictions! This spiced peanut butter ice cream is simple, flavorful, and über healthy for you. Ever since I made my PB2 Breakfast Bars , I have been fascinated with ways to use this replacement. I think PB2 is really the answer to all of us who love peanut butter enough to eat it out of the jar, spoon or no spoon. Great peanut butter taste minus the calories. Can't beat it. This recipe is a take on peanut butter banana ice cream, but it's both healthier and tastier. Inspired by my love of Mayan chocolate, I thought peanut butter's richness could take such intense spices as used below. Cayenne and peanut butter? It just WORKS. PS I just saw a Refinery29 article today about spices that are fantastic for your metabolism: cinnamon, turmeric, cayenne, and ginger. This recipe has both cinnamon and cayenne, and the sweet potato samosas from a few weeks ago contain turmeric and ginger. Enjoy the benefits of these spices with my recipes. Your metabolism is ready to be kickin' butt too! Ingredients Frozen bananas 4 tablespoons of PB2 + water (use the guideline on the bag 2 tbsp of PB2 = 1 tbsp of water) 1 teaspoon of cinnamon 1/2 teaspoon of nutmeg 1/2 teaspoon of clove 1 1/2 teaspoon of cayenne Directions Peel and then freeze your bananas in a bag/Tupperware in the freezer. Your bananas can freeze overnight or just for a few hours. Once they are frozen, cut up into slices and pour into your blender. My ninja is one of my favorite cooking tools, but there are lots of great blenders out there. Just make sure it blends ice! In a bowl combine the PB2 + water. Then add in the spices. Stir. If you want something a little creamier, aka not completely ready to depart from regular ice cream, you could combine some coconut milk or almond milk to make it richer. The spices make this so flavorful that I think it's completely fine without it, but you know what taste you're looking for. Once you've stirred the PB2 spice mixture, pour in with your frozen bananas. Blend until smooth. If your bananas aren't frozen enough, or you want it to be a little thicker, you can add in ice cubes and blend until smooth again. Now you're ready to serve! Mine melted pretty quickly (admittedly, I was taking a ton of photos in front of a window on a hot, hot day!), but if I had used some ice cubes it would have lasted longer. I also tried it topped with some local honey and found that was a great addition to the flavor. I am thrilled to be able to make something so easy that will quench my ice cream desires. This will hit your sweet (and spicy!) spot. Never feel guilty for inviting your vegan friends over for a Sundae party again ;). Happy Eats My Sweets,
