It is ALMOST ST. PATRICK'S DAY. The day of my people! The day of "Irish Car Bombs" (note, "Irish Car Bomb" is a fairly offensive term, so for the purpose of referencing it, I will now call it a "Guinness Bomb") except, whoops, I can't drink Guinness Bombs this year. Or can I...?
As I've mentioned in my last few posts, my husband and I decided to go vegan for Lent. One of the most interesting parts of this experience is learning how many things aren't
vegan. For example, did you know that Guinness isn't vegan? What!? After some further digging, I did find there is ONE Guinness that is vegan - Guinness Extra Stout. Now that I had the Guinness, I needed a vegan Bailey's substitute. I wanted the easiest and quickest Irish cream recipe possible so I can enjoy my (vegan) Irish coffee and Guinness Bombs on St. Patty's Day.
VEGAN IRISH CREAM
1 cup of hot coffee
2 cups of Almond milk
1/2 tablespoon of cocoa
1 tsp of salt
1 tsp of ground ginger
1 tsp of vanilla
Start off with a container that you can secure tightly. We're not going to blend this or heat this; you will simply place all of the ingredients into this container.
First combine the cocoa and the coffee. The best way to do this is to take your cocoa and pour it into the cup of coffee and stir. Now you're ready to pour the almond milk and the coffee/cocoa mixture into your container.
Lastly, take the various spices, put them into the container, seal it, and shake, shake, shake. If you want to get extra festive, add some green food coloring to your drink!
All done! Now if you want to make it alcoholic, add one shot of whisky to the glass you pour yourself. If the non-alcoholic variety is more your speed, this is a great dessert drink. It would also be delicious to use to flavor various vegan baked goods!
