
Last week I brought you
two different ways to flavor your edamame snacks. I've been pretty obsessed with these snacks, and when I become obsessed, I figure out
even more ways to use it. I'm alllllll about stretching meals into as many options as possible. So for this week, I took that spicy edamame and figured out two different ways you can turn this snack into a full-blown meal.
I am seriously thankful to get to make these dishes for you. It causes me to challenge myself to prep my own means by helping you see how to stretch yours. I know that many of you face the same problems I do about prepping meals, but learning some simple tricks can go a long way. These recipes are great to be able to add simplistic variety to your weekly eating.
Spicy Edamame Salad + Stuffed Avocado Directions
Ingredients
1 cup of unshelled edamame
1 cup corn
the juice of one lime
1 tbsp of white wine vinegar
1/2 tsp of cayenne
dash of Salt
1 clove of garlic
chopped cilantro
Notice I started with unshelled edamame instead of the shelled one. It's going to be
much easier to eat if you buy the unshelled ones for this!

You will just take the edamame in a bowl and then add corn.

Next add your garlic.

Then cilantro!

Then all of your spices and juices (lime, white wine vinegar, cayenne, salt).


Mix!

Now, you have a great base to add into two different dishes.
Stuffed Avocado
Stuff the avocado with the spicy edamame mix. This can be served warm or cold. If you like it warm, put it in the oven for 5 minutes then I suggest covering it with some yummy cheeeeeeese! You know this girl puts cheese on everything, so, of course, I had to suggest that.

Spicy Edamame Salad
Grab whatever lettuce mix you like, and combine the lettuce + the spicy edamame mix. Top with veggies like avocado, and cherry tomato. Add additional lime and vinegar, or a dash of olive oil if the salad is too dry to your taste.
