Pumpkin Seed Trail Mix
Stop throwing pumpkin seeds away and use them for this pumpkin seed trail mix instead! Fall is upon us, which means pumpkin season is upon us. Pumpkin flavored everything and pumpkins are everywhere! When you start to use real pumpkin for cooking or carve a pumpkin, you find that pumpkins are filled, FILLED with delicious pumpkin seeds. A lot of people just throw these out, but I bet most people would actually keep them if they knew all of the different ways you could eat the seeds. One way to use the pumpkin seeds is to roast them alone with various seasonings. So easy and so delicious! This year instead of roasting mine alone, I wanted to make a pumpkin seed trail mix that included my own granola. Doing this was so much easier than I thought. Essentially, like roasting, you just put all of your ingredients and seasoning in a pan and BOOM deliciousness for days. HEALTH BONUS: For those of you trying to eat healthier, I made this mix with magnesium in mind. I've been having a lot of charley horses in pregnancy, and I read that this can be caused by a lack of magnesium. Upon reading further about magnesium, turns out it's one of the core vitamins MOST Americans don't consume enough of. Pumpkin seeds, almonds, bananas, and dark chocolate are great sources of magnesium, so this mix isn't just about being delicious but also about taking care of your bones, nerves, tissues and heart. Magnesium helps all of the above! Plus, coconut oil is stellar for your immune system; so basically this mix is the holy grail of healthy and yummy combined.
