Today I'm bringing you a basic protein bowl lunch recipe to help you make your lunches a lot less boring! On Instagram the other day, Food52 annouced their intentions for showcasing #notsaddesklunches. What I loved about this idea is that within one of the posts, it talked about how you could create these burrito bowls (like the ones I made here) potluck style at work by having each person bring ONE part of the recipe. Then at lunch you share your separate parts to make a whole dish. I absolutely ADORE this idea. It's not only helping your lunches be more interesting, but also building community.
I wanted to challenge myself to make my own recipe that would work in this same potluck style and thus I arrived at making a protein bowl. These are bowls that make full meals because of how densely packed they are with healthy, protein-filled ingredients. There are tons of them out there, but I tried to make this one simple and colorful. It turned out delicious. I can't wait to have my own little potluck with my work buddies.
2 cups of red cabbage
2 cups of spinach
1 cup of cubed sweet potatoes
Quinoa or Brown Rice
2 tablespoons Olive Oil
2 tsps Cavendars
1 tsp pepper
1/2 cup of hummus
2 tablespoons of apple cider vinegar
1 tablespoon of lemon
1 teaspoon of ginger
The first layer of your bowl will be brown rice or quinoa.
The night before you plan on eating this for lunch, you will need to prep a few of the ingredients.
Prep the sweet potato in the microwave by cooking it for 5-6 minutes after poking holes on both sides.
You can prep the spinach and red cabbage at the same time. Simply put the shredded cabbage and spinach on a cookie sheet, top with olive oil, Cavendars, salt, and pepper. Cook at 350 for 15 minutes.
The next day when you make your lunch bowl, just add in these cubed sweet potatoes, spinach, and red cabbage on top of the brown rice.
Last step is to cover the yummy bowl with hummus dressing. To do this take the hummus, apple cider vinegar, lemon, and ginger spice, mix it together and pour over the dressing.
