Since I can't drink peppermint mochas, I've become obsessed with peppermint hot chocolate, and now I've figured out how to turn it into FUDGE! That's right - peppermint hot chocolate fudge. I've recently discovered that fudge is crazy easy to make. When I say crazy easy, I do mean crazy easy. Like, I'm only bringing fudge to all of my holiday potlucks because it's the easiest and best dessert in the world.
A few days ago, I made this recipe for peppermint fudge. I luvved how simple it was and how great it turned out, so I thought about different ways I could experiment with it to make it my own. The result is this delicious peppermint hot chocolate fudge. A rich, dense fudge, with a light crunch and marshmallow goodness that will become a Christmas staple for my family, and hopefully yours as well. This would be a great gift to wrap up and give to others or to just surprise your coworkers with. Become everyone's favorite little elf with this recipe!
PEPPERMINT HOT CHOCOLATE FUDGE
3 cups of semisweet chocolate
1 14 oz can of sweetened condensed milk
1 teaspoon of vanilla
1 teaspoon of peppermint extract
crushed peppermints or candy canes
2 cups of marshmallow creme (fluff)
The first step is to make the fudge. The fudge will cook fairly quickly, so you really want to be ready for all of the other steps before starting the fudge.
Before starting the fudge, you want to prep the dish you're going to pour the fudge into. In an 8-inch pan, place a piece of aluminum foil that covers the entire bottom of the pan without too much excess. Then spray this with cooking spray.
Now start the fudge. Over low heat add the chocolate and sweetened condensed milk into a pan. Let it cook over low heat, stirring frequently. When the chips are almost completely melted, add in the vanilla, peppermint extract, and some (NOT ALL!) of your crushed peppermints/candy canes. Stir together.
Once everything is melted and combined, pour the hot fudge into the pan.
As soon as the fudge is in the pan, you will want to zap your pre-prepped marshmallow creme in the microwave for about 30 seconds.
The second the marshmallow creme is warmed, you will take it out the microwave and spread over the top of the fudge. This is MUCH easier to spread once it has been warmed. Spread evenly across the fudge.
Then top the creme with additional crushed peppermints or candy canes.
Refrigerate for at least two hours.
After the fudge sets, you will want to peel the aluminum off of the bottom of the fudge. Because you've sprayed this, it should be fairly easy to do.
The fudge is ready to cut once this aluminum is off!
