Lucky Black-Eyed Peas
Who is ready to get lucky with black-eyed peas this New Year's Day? As many of you know, it's a tradition to eat black-eyed peas on New Year's day because they are supposed to bring wealth into the year. What you may not know is that there are many spices that are also considered to bring good luck. This recipe combines black-eyed peas with two lucky spices - cinnamon and ginger. All of these are thought to bring wealth and happiness into your life! While I may not believe in it, I think it's still a fun tradition to celebrate. I don't eat black-eyed peas often, but when I do, they are typically just from a can and cooked. However, a few years ago I tried some crunchy black-eyed peas at the Capital Bar and Grill. It's a free little appetizer they will give you upon request. I personally loveeeee these black-eyed peas, so for this recipe I wanted to give my own take on them. These black-eyed peas are easier for snacking, and easier to use as a topping in various other recipes. These would be great on a cabbage salad for those of you that like cabbage with your black-eyed peas as your New Year's tradition.
