Time to mix up those plain ol' Kale chips, with a Kale chip snack mix. I know A LOT of you are on that healthier-you resolution train, and I totally get it. I'm on the trying-to-be-healthy-for-baby train as well. Part of trying to be healthy is supplementing those snacks you know aren't so good for you, I'm looking at you chips and salsa, for snacks that are healthier. The struggle is finding those snacks that actually don't make you miss the junk food!
Kale chips have been a thing for a few years now that people love to snack on, but I have to admit, it took me a long time to be converted to the kale side. Straight kale is still something I'm not the biggest fan of, so for this recipe I wanted to challenge myself to make a kale snack I actually liked. That's when I had the idea for this kale snack mix. Instead of just kale chips, this is a mix of healthy ingredients that compliment one another. Keep this with you to nom on throughout the day so that you can snack the healthy way.
KALE SNACK MIX
Bunch of kale
1/2 a red cabbage
1 cup of cranberries
1 cup of pecans
1/2 cup of olive oil
1/2 cup of apple cider vinegar
1 tablespoon of honey
First, I gotta warn you, don't blame me if you end up liking this so much you eat it all in one sitting. That may or may not have happened to me...
Go ahead and pre-heat your oven to 350 while you prep the mix. Next you will go prep the kale. Wash off the kale and cut off the leaves from the rib. Then cut up the red cabbage. Put the kale, red cabbage, and pecans on a cookie sheet.
Next, you will create the dressing. Combine the olive oil, apple cider vinegar, honey, salt, pepper, and garlic. Put as much of the seasoning in as you want.
Lastly, take the mixture and pour it over the pan.
Cook for 10-15 minutes.
Once the kale mix is done cooking, you will top it with cranberries.
This works as a great side for a healthy dinner or as a snack to eat throughout the day. Cranberries and kale are some of my favorite flavors together, and they combine nicely with the cabbage, pecans, and dressing. Both sweet and sour flavors combine to make this delicious.
