Kale Blueberry Sautée
You know after vacation when you're body is like, "stopppp putting trash in me and start giving me vegetables!" that is where my body is right now. After a week at the beach and a weekend in New Orleans, I need some major detoxing. So, I went to the grocery store and loaded up my cart with vegetables. In looking at my veggies, I decided to combine kale and blueberries to see what would happen. I wanted this to be more than a salad, so I sauteed it, and let me tell you, it was great. Exactly what I needed to make my body feel better. Now that I've made this recipe, I know it'll become one of my go to dinner sides. Sometimes it's so hard to figure out a great side for dinner, but this would be great to accompany any meat protein. I know kale is easy to just make a salad with, but it's nice to have it warm instead. This is also something that would be great to make a big batch of to use as lunch during the week. Kale Blueberry Sautee Ingredients kale 1 tablespoon olive oil 1 tablespoon of apple cider vinegar sea salt garlic blueberries Directions First , you need to heat up the olive oil and garlic on medium. Once the pan is hot, you can add in the kale. You will cook the kale for about 5 minutes, or until it all shrinks down. Once it starts to shrink down, you will add in the blueberries. Continue cooking for about 2 more minutes. Next, put everything in a bowl or serving dish. Top with sea salt and the apple cider vinegar. Optionally, add feta or parmesan on top. This is a great way to make a more inventive side dish for dinner. Add more color to your dinners or lunches with this dish!
