I've got to admit it. I'm a little sad to not have a house. My husband and I live in an apartment downtown that we love. It's beautiful and in the best possible location. I ADORE IT. But, around holidays like Memorial Day when barbecues are aplenty, I get a little sad to not have our own back deck. We have a tiny porch, but I'm 100% sure it's illegal to grill outside on it. It's in these moments of sadness, that I find solace in one of my favorite gifts of all time: the Breville panini maker.
I know a panini maker sounds limiting at first. Why would I need a whole machine to make a panini? However, upon receiving one, I realize there are SOOOOO many different ways to use panini makers. This week, I tested out a new one - grilling pineapple. I didn't just grill the pineapple, I created two different flavor marinades for the grilled pineapple. Use this on your real grill (sigh!), a panini maker, or even your oven, this weekend.
First, you must tackle cutting the pineapple! Which is actually so easy as you may remember from last summer.
You could use canned pineapple rings for this as well, but go fresh when you can.
Once you have the rings, it's time to top them with the marinade.
For one set, I used the poppy-seed + ginger + lime combo. This is light and a tiny spicy! I simply sprinkled each of the ingredients to cover the slice. I then squeeze the lime on top.
For the next set I used the brown sugar + cinnamon combo. Making that pineapple extra dessert-y!
As I said earlier, I cooked mine on my kick-butt panini maker. I cooked it for three minutes and boom, done!
Now they're ready to serve!
You can eat these pineapple slices as-is or serve them as part of other dishes. Want to make an interesting burger? Put a pineapple on it. What about some yummy chicken breast? Pineapple! There are lots of other combinations here, but you get the idea. It's pineapple season y'all!
