Not to get ahead of myself, but Y'ALL: these burrito bowls are a gift from the lunch Gods, especially for those of you looking for fast lunch solutions. These are the answer to quick, protein filled lunches that aren't just salads.
As many of you know, I'm a teacher. And if any of you know teachers, you know we love routines. Routines make all of the extra-complicated parts of our life less complicated. While I prepare for the school year by revising lessons, creating new lessons, and planning get-to-know-you activities, I inevitably have to to think about all of the planning I have to do in my personal life to be prepared for the school year, and I'm definitely turning towards quick meals like these burrito bowls. AKA, this girl is giving Chipotle a run for its money.
4 cups white rice
1 cup chopped cilantro
2 cups corn
2 cups Black Beans
Juice of 1 lime
Mason jars with lids - This recipe will yield 4 mason jar burrito bowls.
Let me say first of all, there are soooo many ways to personalize these burrito bowls. It really just depends on what you love. I've made the basic bowl with flavors I love.
First step is to prepare your cilantro rice. You need four cups of rice for this recipe. Once the rice is made, mix 1/2 a lime, cilantro, and rice together.
Once the rice is prepared, make a base layer in your mason jar. 1 cup of rice per jar.
Next, make a second layer of black beans. 1/2 a cup per jar.
Your third layer will be corn. 1/2 a cup per jar. I use a steamer bag of rice with red peppers, but any steamer bag will do. This is really the only vegetable that I prefer to be cook for this.
Now the fresh layer of tomatoes. 1/2 a cup of each per jar.
Then take half a lime and squeeze the lime over the ingredients in the jar.
Refrigerate and let all those yummy flavors mix together.
On the days I eat this for lunch, I typically have an avocado that I use to top the burrito bowl.
Listen, we all get busy, it's not about fighting the busy-ness, it's about figuring how to better manage the little free time we have to maximize the rest of our lives. I know I definitely struggle with eating healthy when I don't plan ahead, so planning is crucial for me.
