Luvvs, SNOW days have been hitting us hard here in Arkansas. While stuck inside it is sooooo hard to eat healthy. All I want to do is snack, snack, and snack some more, but I barely had anything in the house (I wasn't expecting snow!). On top of being snowed in and not having a lot of groceries, my husband and I have decided to try veganism for lent. So, how do I, the girl with the biggest sweet tooth in the world, manage to find a decent desert without any dairy when I can't get out of my snow-covered road to get any of the typical recipe substitutes?

10 MINUTE OATMEAL COOKIE

4 packets of quick oatmeal 1 banana 3 tablespoons of almond butter 1 tsp of vanilla sprinkle of sea salt Yields 12 cookiesDirections
Get out those packets of oatmeal that are just hanging out in your pantry. This can be any flavor of oatmeal. In fact the different flavors can help keep this recipe interesting. There are so many different ways to make these cookies! Chop up your banana into small pieces. Cut into horizontal and vertical pieces. Now take the oatmeal packets, banana slices, almond butter, vanilla, and salt and mix them in a bowl. Use a fork to mix and then use your very clean hands to mash it and make sure that everything is thoroughly combined. Once mixed, you have two options: chill them OR bake them. To cook them, bake in the oven at 375 for about 5 minutes. They are awesome both ways! Cooked they are a perfect breakfast snack. Chilled they are a great post-exercise snack. No one ever said healthier snacks had to be complicated. Uncomplicate your snacks with this quick treat!
